- 1 cup plain flour
- 1 cup rolled oats
- 1 cup desiccated coconut
- ½ cup caster sugar
- 1 lemon, rind only
- 125 grams butter
- 2 tablespoons golden syrup or maple syrup
- 1 teaspoon of bicarbonate soda
- 1 tablespoon boiling water

Method – Makes approximately 24 biscuits
- Preheat oven to 180°C (Adult job).
- Line baking trays with baking paper.
- Sift flour into a bowl.
- Grate zest off lemon (Adult supervision required).
- Add oats, coconut, sugar and lemon rind and stir.
- Place butter and golden syrup in microwave safe bowl and microwave on high for 30 seconds or until butter melted. Stir.
- Combine bicarbonate soda and boiling water in jug (Adult job to fetch boiling water).
- Add bicarbonate mixture to butter mixture and stir. Then add this mixture to largebowl with flour. Stir.
- Roll level tablespoons of mixture into balls.
- Place balls 3cm apart and slightly flatten with fork/eggflip.
- Bake for 12-15 minutes or until golden.
- Allow to cool and then enjoy!
